I've been mulling over something similar. So maybe the potions have recipes, and if you make it with the same recipe you get the same look, smell and taste. Which means the characters can identify potions they've seen before just by those things if they don't have a label. But any time you want to throw them a curve ball the potion was made using a different recipe and that might be more likely if it was made in another region or a long time ago. Also the recipes for the more common potions might be widely known but rarer potions closely guarded secrets and vary much more.
